recipe: mom's apple cake

I got out my recipe box this weekend, looking for a seasonally appropriate dessert to make when friends came over for dinner Sunday night. I ended up picking out this recipe for apple cake, which came from my mom, and it was a big hit.

This is a tasty fall cake. In fact, it's among my favorite apple desserts. It's remarkably moist.


Mom's Apple Cake

  • 3 eggs
  • 1 3/4 cups sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons cinnamon
  • 4 medium apples (or 2 extra large apples), peeled and chopped
  • 1/2 cup walnuts

Grease and flour two 8-inch or 9-inch round cake pans.

Mix the eggs, sugar, vegetable oil, and vanilla in a large bowl.

In a separate bowl, mix the flour, salt, baking soda, and cinnamon.

Add the flour mixture to the wet ingredients. Fold in the apples and walnuts. Pour batter into prepared pans.

Bake at 350 for 38-40 minutes in 8-inch pans or 30 minutes in 9-inch pans.

When cool, sprinkle with powdered sugar.
